Coffee grind size chart
Grind size is the dial that controls extraction, and every brewer wants a different setting. The full chart with kitchen-texture references, plus how to adjust when the cup is wrong.

Grind size is the most powerful control you have over a cup of coffee, and it works through one mechanism: surface area. Finer grounds expose more coffee to water, so they give up their soluble compounds faster; coarser grounds expose less and extract more slowly. Everything else — brew time, water temperature, agitation — is a way of matching that rate to the method you are using.
That is why the chart below is not arbitrary. Espresso pushes water through in 20 to 30 seconds, so it needs grounds fine enough to give up their flavor in that time. Cold brew steeps for twelve hours, so it needs grounds coarse enough not to over-extract across half a day. A French press sits in the middle at about four minutes. Match grind to contact time and the coffee comes out balanced; mismatch it and no bean, brewer or technique will save the cup.
The chart
Texture references are the useful part. Grinder numbers are not transferable between machines, but a kitchen comparison is, and it will get you close enough on the first brew to start adjusting sensibly.

Why each method sits where it does
Espresso is fine because it has almost no time. Water is forced through a compacted puck at around nine bars for 20 to 30 seconds at a ratio of about 1:2. To dissolve enough coffee in that window, the particles have to be small, and the puck also has to generate the resistance that makes the pump work against it. The NCA describes the target as fine, like table salt. Too coarse and the shot gushes out in eight seconds, watery and sour; too fine and it chokes, dripping bitter tar.
Drip and pour-over are medium because gravity is doing the work.Water passes through the bed once, pulled only by gravity, over three to five minutes. Grind too fine and the bed clogs, water pools, and the long contact turns bitter; grind too coarse and it rushes through before extracting the sugars, leaving a thin, sour cup. Sand is the right mental image, with pour-over slightly finer than drip because your pour controls flow more precisely than a machine’s shower head does.
Immersion methods are coarse because time is long and the filter is metal.A French press steeps for four minutes and then pushes a mesh through the coffee. Fine particles slip straight through that mesh, keep extracting in your cup, and turn it muddy and bitter — which is the single most common French press complaint and is nearly always a grind problem rather than a press problem. Cold brew extends the same logic to twelve hours, which is why it needs the coarsest grind of all.
Moka pots are the odd one out.They brew at roughly 1.5 bars of steam pressure, so they want a grind finer than drip but noticeably coarser than espresso, and you should never tamp the basket — there is not enough pressure to push through a compacted puck. Details are in our moka pot roundup.
Consistency beats size
A chart implies grind size is a single number, and it is really a distribution. Every grinder produces a spread of particle sizes around its target, and how tight that spread is matters more than where the middle sits. A blade grinder does not grind at all — it smashes — producing dust and boulders simultaneously, so the dust over-extracts into bitterness while the boulders stay sour, in the same cup, at the same time. How to adjust when the cup is wrong
This is the part worth memorizing, because it replaces every chart including this one. Taste the coffee and ask which of two things it is.
Sour, thin, weak, empty, drying at the front of the tonguemeans under-extraction — you did not get enough out of the coffee. Grind finer. If the brew also finished too quickly, that confirms it.
Bitter, harsh, drying at the back of the throat, hollow and burntmeans over-extraction — you got too much out. Grind coarser. If the brew also stalled or ran long, that confirms it.
Change one variable at a time and one step at a time, and brew again. Two or three iterations usually lands it. If both descriptions apply at once — sour andbitter in the same cup — that is the signature of an uneven grind rather than a wrong one, and the answer is a better grinder, not a different setting.
The other levers, in order
If grind adjustment is not getting you there, the next variables are worth knowing in order of effect. Ratiocomes first: the SCA’s reference point is roughly 55 grams of coffee per liter of water, and if your coffee is weak rather than under-extracted, more coffee is the fix, not a finer grind. Temperatureis next — the SCA specifies 195–205°F for brewed coffee, and cheap drip machines that fail to reach it produce sour coffee no adjustment can rescue. Freshness is third: coffee peaks a few days to a few weeks after roasting, and stale beans taste flat regardless of grind. Only then does the brewer itself matter.
Write your settings down
Grinder numbers are private language, but they are your private language, and the fastest way to consistent coffee is a note on your phone: bean, method, grinder setting, dose, yield, time, and one word about how it tasted. Three weeks of that beats any published chart, because it is calibrated to your grinder, your water and your palate. It is also how you avoid re-dialing from scratch every time you open a new bag.
