Here is the mechanism, stated plainly: brewing is extraction, extraction depends on how much surface area the water meets, and surface area depends on how evenly the coffee is ground. A blade grinder does not grind — it smashes — producing a chaotic mix of dust and boulders that extract at wildly different rates, so the dust burns bitter while the boulders stay sour in the same cup. A burr grinder crushes beans between two shaped surfaces set a fixed distance apart, so the particles come out roughly the same size and the whole dose extracts together.
